About the Chef:
Using the inspiration of our beautiful coastline and all of our natural resources, Executive Chef Jose Velasquez has been creating memorable dining experiences on the Monterey bay for 20 years. Originating from Jalisco, Mexico, Chef Jose Velasquez has trained with several of Monterey's top chefs including Jim Gallivan at the Le Cordon Blue Atlanta Culinary Academy. Chef Velasquez has an unquenchable desire for food and independent learning. Chef Jose Velasquez' creativity and outstanding work ethic has developed a talented and well organized kitchen staff with a passion for food like no other. Chef Velasquez serves up some of the Monterey Peninsula's most creative California coastal cuisine. Chef Jose combines local ingredients with fresh seasonal fruits and vegetables, sustainable seafood and organic meats to create dishes that enhance the natural flavors of these ingredients.
